Cooking masterclasses: Learn from the best at this year’s festival
The Masterclass Theatre tutorials invite food-lovers to expand their repertoires and learn about global speciality dishes in the company of expert chefs.
Unlock the secrets of a selection of exquisite international cuisines at the Masterclass Theatres, returning on the 20th and 21st of July for the National Geographic Traveller (UK) Food Festival. Visitors can learn how to prepare regional delicacies from guest chefs, featuring countries such as Ecuador, Indonesia, Malaysia, Georgia, Barbados and more.
These in-depth tutorials will invite food-lovers to uncover cuisine-defining techniques and ingredients from some of the world’s most fascinating culinary destinations. Offering visitors the chance to expand their repertoire and even sample some of the finished dishes, the likes of Petty Pandean Elliot and Pino Edwards will be gracing the Cinnamon and Saffron stages throughout the weekend.
Saturday masterclasses:
- Guram Baghdoshvili is set to offer up a taste of his native Georgia with a tutorial on making beef khinkali dumplings and preparing meskhetian khachapuri cheese bread.
- Chef and author Petty Pandean-Elliott will be crafting Indonesian braised tempeh with spices and sweet soya, served with a mixed salad and sambal tahini.
- Ecuador will be inviting visitors to discover the flavours of the South American nation’s vibrant cuisine.
- Catherine Sharman, a nutritionist and culinary expert, will demonstrate the ways in which British Indian cuisine can contribute to your health and wellness.
- Chef David Rayes will be conjuring up the flavours of Quito, Ecuador’s capital, cooking his fritada — sumptuous fried pork shoulder found at streetside stalls and restaurants alike.
- Kurt Zdesar — the restaurateur behind Ping Pong and Chotto Matte — will be preparing gyoza and yellowtail sashimi in the Nikkei style, a fusion of Japanese and Peruvian flavours.
- Kareem Roberts will be cooking up Antiguan ducana dumplings with saltfish, a local speciality from the Caribbean island on which he was raised.
Sunday masterclasses:
- Tekuna Gachechiladze will throw the spotlight onto Georgia’s vegetarian cookery, preparing her aubergine, spinach and walnut pkhali, a traditional vegetable pâté.
- Nutritionist and author Jenny Tschiesche will be using an air fryer to make a modern Japanese classic: chicken katsu.
- Norman Musa will be helping visitors master gulai ayam chicken curry and roti canai flatbread.
- Pino Edwards, the chef behind the iconic Indonesian street-food stall Pino’s Warung in Camden Lock Market, will be revealing the secrets of his grilled charcoal chicken satay.
- Plus, even more dishes from Barbados, Antigua and Barbuda, Ecuador and beyond.
